Installation on the wall

We call it the DNA of the Insider, here one can find collected photos and pictures related to our bar. We have also put the logos of our partners Baccarat, Roku, Behind Bars here. There is a photo of our lab where we had conducted research even before the start of the construction; of an inverted table, as well as of the process of its creation by the master; of the building walls protruding from the ground; of French craftsmen blowing Baccarat glasses, etc.

The library

This room is our place of inspiration. We also use it to accommodate our regular guests when all the other seats are occupied. If one observes the bar from here, its design looks in a minimalistic-futuristic manner, while this room is different, as it looks more like a perfumer's shop of the late 20th century: a brown leather chair, a cabinet made of rusted metal and bottles with handwritten inscriptions. By the way, those are our distillates from the workings, some of which we use in drinks, and some are just waiting in the wings. The installation of broken glasses conveys the philosophy of the importance of the moment. Each of those glasses is a work of art created by the masters. Even with their high price, their spiritual value is much higher. For example, the design of the Arthur glass was invented in 1841 by the order of the King of France and, through generations, it was perfected by artisans, promoted by talented marketers, and inspired by people of art. Unfortunately, glass is one of the materials that cannot be repaired. After enjoying a drink and being inspired by the aesthetics of the glass, it all leads us to think that inside each of us there is something we give a huge amount of resources to, whether it is some project or a relationship, which value exceeds the material price. Due to careless actions or unforeseen circumstances, it can be broken, as well as those glasses. Sometimes it is worth reminding oneself to enjoy every moment of our lives!

The laboratory

We have put together one of the most progressive bar laboratories in the world to ensure that nothing limits our imagination and creativity, as well as in order to create unique drinks for you — our guests. To create our cocktails, we use exclusively natural ingredients from all over the world, such as patchouli, sandalwood, angelica, sweetie, matcha, etc. We also use modern techniques to enrich the taste and aroma of the ingredient in its initial natural form, to reflect its very best qualities. We have placed the laboratory behind the wall and glass in order to maintain a culture of transparency and honesty towards the guest. This is a place where we make almost all of our performances and parts for drinks. One can see our approach and our relationship to the space we work in with ingredients, always maintaining cleanliness and using both traditional and innovative techniques.

Interior

If you look around, you can see that all the walls are made of pressed, or “rammed,” earth. That is a pity that since such walls are not made in Russia, we had to bring them from abroad. We hope that we can inspire local builders to implement this technology in their work here, in Russia. The method was already known and used 1000 years ago in Tibet but only now, when the technology has developed, it has become more reliable and made it possible to build houses and cottages from rammed earth. Walls made of earth retain 30% more moisture in the room and are also a natural air filter. Moreover, when the time comes to rebuild the house, there is much less waste from such walls.

At the design stage of the bar creation, we understood that we would like to gather insiders from entirely different spheres in one space, where we would create an atmosphere conducive to communicate and inspire each other. That is why we have made two communal tables where insiders from different spheres come together to communicate and inspire each other. Thus, the idea of the existence of a bar as a place where people would gather 300 years ago to discuss news takes on a new meaning. Now we learn the news from the Internet, and we meet in the bar to be inspired and to inspire, to communicate and share our ideas with like-minded people. Because of that we made a two common tables to share insights with your friends or with tablemates.

At the start of building the bar we faced a new task — to break the stereotype and create a new bar counter. What is a bar? According to the etymology of the word, it is a "barrier." We have decided to remove the hurdle between two types of insiders — bartenders and guests — so that it would fully fit into the concept of our bar. To do this, we have teamed up with the leaders of the bar stations design industry, Behind Bars studio from Oslo, Norway. After a year of work on the project and several design options, the outcome of the collaboration was a unique bar station, the only one of its kind in the world, where bartenders work simultaneously and guests are comfortably accommodated. The station is designed in the form of a hexagon and resembles a round table, where like-minded people gather to discuss current news. Here, a guest is constantly involved in the process of making drinks, we invite everyone to chat with the bartender or other guests at the station. In contrast to the classic counter, this version of the bar gives completely different sensations, they are not better or worse but simply different. I'd like to emphasize that at the moment such an experience can be obtained in the only bar in the world.

The station is highly ergonomic, it consists of cells, and the cell, in turn, is the most ergonomic form given by nature to man. Each cell can change its position, thereby allowing one to build a workplace based on the current menu and the preferences of the bartender working behind it. There are also refrigerators for storing glasses. We believe that a glass greatly affects the feeling of the drink, so we thoroughly select each shape and bring the best glasses from around the world from such manufacturers as Kimura from Japan, Baccarat from France, Rona from Slovakia, and so on. Here we also collect garbage separately — while we separate plastic from other garbage, organic waste does not enter the station, as we work with it at the preparation stage. Moreover, the installation in the center of the station is a natural oasis symbolizing the harmony of innovation and nature.

We are the first and, so far, the only ones using a unique technology at that part of station and in the Baccarat trolley — two German thermostats that allow keeping an ideal temperature for a cocktail continuously all day long. For instance, it always keeps -5 °C for a Negroni. Thus, in this case, we do not use ice, as any other bar does. When ice is used to make a drink to cool and dilute the concentrate, the drink is diluted with melted water from the ice, which is about 45% of the volume of the cocktail. In this case, we have the opportunity to replace meltwater from the ice with coconut water, sandalwood water, etc. This makes the taste of the drink more layered and saturated and gives one a unique experience.

The ceiling resembles the upside-down tectonics of the earth, just like the logo of our bar. The bar is called Insider and that is our philosophy reflected in our communication with the world. An insider is a person that has some accurate and deep information in a certain area. We consider ourselves insiders in the field of drinks, bars, and hospitality and, like for any insider, our mission is to bring something qualitatively new to our profession. Along the way, we meet insiders from other spheres and we collaborate with them to achieve greater and better quality results. For instance, like the case with the world-renowned crystal maker Baccarat — trying to create an exquisite drink, we serve it in a glass that crystal experts have worked on for generations to give you a unique experience while enjoying the drink. Furthermore, we collaborate with pastry chefs, perfumers, and many other people who elevate their craft to the level of art.
